Recipe: torta di fregolotti

The torta di fregolotti is a traditional dessert from Trentino. Super easy to make, it keeps for as long as one month and has all the fragrance and taste of butter, almonds and walnuts. Make it once you’re back home and feel like you’re still in the mountains. Ingredients: 400 g plain flour, a pinch of salt, 200 g butter, 200 g sugar, 2 eggs, 100 g coarsely chopped almonds and 100 g coarsely chopped walnuts (or 200 g coarsely chopped almonds), 3/4 of a baking powder bag, a sprinkle of grappa

Method:

  • Mix all ingredients in the order they are listed above until you have a shortcrust pastry-like dough.
  • Shape into small pieces and put them on a baking tray covered with parchment paper. Make sure they’re not too close to one another, as they will come together while they’re rising.
  • Bake in a pre-heated oven at 180°C for about 35 minutes.
  • Cut the “torta” into squares as soon as you take it out of the oven and keep them in a tin box.
  • It stays crisp for as long as one month.
