Val di Fassa is not just about apple strudel. Try this delicious cake, one of the many delicacies that welcome you every morning in the breakfast room. Ingredients: 75 g plain flour – 75 g potato flour – 75 g unsweetened cocoa powder – 100 g butter – 140 g caster sugar – 3 eggs – 100 ml milk – 1 baking powder bag – 3 or 4 pears (ideally, they should be rather small and ripe) – Chocolate drops.

Ingredients: 75 g plain flour – 75 g potato flour – 75 g unsweetened cocoa powder – 100 g butter – 140 g caster sugar – 3 eggs – 100 ml milk – 1 baking powder bag – 3 or 4 pears (ideally, they should be rather small and ripe) – Chocolate drops.

Method:

  • Melt the butter and wait until it cools down.
  • Separates egg whites from yolks, then whip the former.
  • In a bowl beat the yolks with the sugar until pale and fluffy.
  • Pour the potato flour, plain flour, cocoa and baking powder, melted butter and milk.
  • Mix well until you have a smooth dough.
  • Add the whipped whites and fold in gently.
  • Peel the pears and chop them into thin slices or small pieces, the evenly place them on the top of the cake.
  • Grease and flour a cake tin, pour the mixture and bake in a pre-heated oven at 180° for about 40 minutes.
  • Use a wooden toothpick to check for doneness. It should come out clean.
  • Remove from oven and cool before slicing.
